I’m all about a quick and easy dinner these days. Don’t get me wrong, sometimes I’m up for a kitchen marathon to produce a fancy dinner, but usually I’m more up for a 15min or less kinda deal. Creamy roasted red pepper fettuccine embodies everything a quick family dinner should be. Simple to make, packed with flavour and super filling as well.

Creamy Roasted Red Pepper Fettuccine

All you need for this dish is 9 ingredients, half of which I bet you’ve already got knocking about the cupboards.

The red peppers I usually have are jarred, just to keep in line with the speedy aspect of this recipe. But feel free to use fresh ones and roast them yourself, I’ve added a quick how-to in the recipes notes.

Alongside the red peppers there’s a couple of key ingredients that really make this dish hit the roof. Not literally, unless you’ve got the gas too high then quite possibly.

Creamy Roasted Red Pepper Fettuccine

The first is smoked paprika. For the love of god please don’t forget the smoked paprika.

Adding just a tsp of smoked paprika totally sets this dish apart from the rest. The smokey twang emphasises the char from the red pepper SO beautifully.

Another absolute must is the garlic. It’s very rare I make a creamy pasta sauce without garlic and this dish is no exception. If I’m roasting the peppers I usually roast the garlic aswell but again, for a speedy version here I’ve just chopped them up and chucked them in.

Ingredients
  • 4 large or 5 small/medium Roasted Red Peppers (See Note A)
  • 13.6 oz (400g) Fettuccine
  • 1 1/4 cup (300ml) Heavy Cream
  • 2 tbsp Butter
  • 1 medium-large White Onion, diced
  • 2 cloves of Garlic, minced
  • 1/2 cup (50g) Parmesan, finely grated plus extra to serve
  • 1 tbsp Fresh Parsley plus extra to serve
  • 1 tsp Smoked Paprika
  • Salt & Black Pepper to taste
Extras 'n' Optionals
  • Chilli Flakes to preference
Method
  1. Pop your Fettuccine in salted boiling water and cook until al dente.

  2. Meanwhile in a suitably sized pan fry your Onions and Garlic in your 2 tbsp of Butter. Once softened, place in a food processor with your Cream, Red Peppers, Parsley, Smoked Paprika, Seasoning and blitz until smooth. Check for seasoning and adjust accordingly.

  3. Pour back in the pan and stir in your Fettuccine and Parmesan over medium heat. Allow to simmer until hot throughout.

  4. Serve with extra Parmesan and Parsley.

Recipe Notes

a) I use jarred roasted red peppers for this recipe to keep it a speedy 15min meal. However if you only have fresh simply broil skin side up until black on the outside, turning throughout to keep an even char. Place in a bowl with cling film over and allow to cool, after peel off the skin, deseeded and slice.Β
