You really don’t need to scroll through 100 slightly different versions of mashed potatoes to find one worth making. After more than a decade of developing comfort food recipes, I’ve made a lot of mash – and these are the recipes I always recommend first.

Each one brings something different to the table, whether you’re after the perfect side for Thanksgiving, something special for a roast dinner, or just a ridiculously good bowl of mash to go alongside dinner. I’ve also picked up plenty of tricks over the years for making mashed potatoes extra creamy, properly seasoned and full of flavour, so you’ll find all of my best tips along the way too.

If you’re after classic mashed potatoes done properly, this is the place to start. They’re ridiculously smooth and creamy without being or stodgy, and it’s the recipe I come back to whenever I just want really, really good mash.

This is one of my most viral recipes, and it’s easy to understand why. Cheesy, creamy mashed potatoes topped with a crispy garlic parmesan gratin, then baked to perfection. It’s a complete show stopper!

For when regular mash simply isn’t going to cut it. Roasting the garlic first makes it gorgeously sweet and mellow, then plenty of cheese turns the whole thing into a seriously indulgent bowl of mash.

This is one of those sides that can completely transform a dinner without requiring much effort. The mustard cuts through all that buttery richness and adds just enough punch to make it particularly good alongside sausages, beef and anything involving gravy.

Not all mashed potatoes need to be perfectly smooth. Leaving the skins on gives these a more rustic texture and a little extra flavour, making them ideal when you want something hearty, unfussy and a bit more substantial.

Sour cream and chives are such a simple addition, but they completely change the personality of a bowl of mash. You get a subtle tang from the sour cream, loads of freshness from the chives and a mash that feels special.

And finally, something a little different. Sweet potatoes already bring loads of natural sweetness, so I love balancing that with mellow roasted garlic to make a mash that’s savoury enough to sit comfortably alongside everything else on the plate.
