Pretzel Sticks
To make the trunk of the trees, we will be using pretzel sticks. At first, I figured these were more available in the US, but to my surprise you can get something essentially the same in most supermarkets in the UK too.
The photo below is what you’re looking for – which I believe may also be called ‘salted sticks’.

Brie Christmas Trees
I made quite a few combinations of brie Christmas trees, but needless to say, I settled on one including bacon. Because quite frankly, the combo of bacon, cranberry, cheese and chives is absolutely elite.
Hot honey
Once you’ve sliced the brie, you’ll need to dunk it into honey before you dunk it into the toppings, just so they stick. I personally love using hot honey, just for a kick of spice, but you could realistically use regular honey if you’d prefer.
Process shots: slice brie into 12 wedges (photo 1), snap a pretzel stick and poke it through each wedge (photo 2), dunk cut side into honey (photo 4), dunk into toppings (photo 4).

Serving Brie Christmas Trees
These are best served right away, but you could prep them ahead (leaving the pretzel stick out, otherwise it’ll go soft). Just note that the bacon will be more ‘chewy’ than ‘crisp’.

How to make Brie Christmas Trees (Full Recipe & Video)

Cranberry, Bacon & Brie Christmas Trees
Equipment
- Baking Tray or Pan (for bacon)
- Kitchen Roll/Paper Towels
- Sharp Knife & Chopping Board
- 2 Large Shallow Dishes
Ingredients
- 160g / 6oz Streaky Bacon (raw weight)
- 50g / 1.8oz Dried Cranberries, finely diced
- 2 tbsp Chives, finely diced
- 3-4 Hot Honey, or as needed (see notes)
- 1x 200g/7oz block of Brie (see notes)
- 4 Pretzel Sticks (see notes)
Instructions
- Cook the bacon using your favourite method until crisp, then dry on paper towels/kitchen roll to catch excess fat. Leave until the bacon completely cools to room temp, then finely dice.
- In a large shallow dish, combine the bacon, cranberries and chives. In another dish to the left, add the honey.
- Place a chopping board to the left of the honey and slice the brie into 6 even wedges. Flip each wedge on its side and slice down the centre to create 12 thinner wedges. Snap the pretzel sticks and poke them through the longest side to create the tree's trunk.
- One by one, dunk the wedges cut-side down into the honey (making sure you cover the sides), then into the bacon mixture. You may need to use your fingers to press the mix into the brie to ensure the whole side is covered. If the mix isn't sticking/covering the cheese, you may need to dice it finer.
- Repeat, then tuck in and enjoy!
