Easy Rocket Salad
This rocket salad is one of the easiest salads you will ever make and it pairs with just about everything!

Potato/Vegetable Peeler
- 2 tbsp Extra Virgin Olive Oil
- 1 tbsp Balsamic Vinegar
- 1/8 - 1/4 tsp Salt, or to taste
- 1/8 tsp Black Pepper, or to taste
- 4oz / 120g Rocket/Arugula
- 1oz / 30g shaved Parmesan, or more to preference (see notes)
In a large mixing bowl, whisk the extra virgin olive oil, balsamic vinegar, salt and pepper until it binds into a dressing.
Add the rocket and toss until coated, then toss in the parmesan.
Tuck in and enjoy!
a) Serving - this will comfortably feed 4 as a side dish, but you could stretch to 6 for a small side. This is best made fresh, but thankfully it only takes 5 minutes.
b) Parmesan - I highly recommend shaving the parmesan, just so you get larger pops of flavour. It's also more visually appealing.
c) Calories - whole recipe divided by 4.
