This Chicken Avocado Pasta is the perfect romantic dinner for two. A quick and easy avocado pasta recipe for the most delicious date night dinner! 

Oooo we do love a date night dinner here at the Don’t Go Bacon My Heart HQ. Mainly to pretend it’s for two people, but in reality I’m actually eating the whole thing to myself. However, this time it was actually for two 😂 I even made hubby help with the filming (you’ve got to earn your dinner right!?).

Avocado Chicken Pasta

Let’s be real here, the only power couple in this situation is chicken and avocado. There’s literally no other combo I want all up in my face at any given moment. But introduce pasta into the equation!? Oh my. We’re in trouble. And so is my waistline. Anywho, let’s continue.

The components of this chicken avocado pasta are: linguine, wrapped in a creamy avocado sauce with roasted cherry tomatoes, topped with grilled chicken strips.

The Perfect Date Night Dinner

What makes this the perfect dinner for two?

Well, firstly it’s truly delicious, and who doesn’t want a delicious dinner on date night?

Secondly it’s incredibly quick and easy to make. Nobody really wants to be slaving away in the kitchen trying to follow a ridiculously hard recipe on date night.

Lastly, pasta. Because if love isn’t eating extreme amounts of pasta together then I don’t know what love is.

Roasted Cherry Tomatoes

These really are the secret weapon to this dish. A gorgeous burst of sweetness and some nice colour contrast. They bulk out the pasta too, which is great if you’re opting to leave out the grilled chicken.

To get the most out of your roasted cherry tomatoes, you want to roast them low and slow. As low as 150c/300f for as long as 1+hours. However, to keep things easy, I usually pop them in the oven at a higher temp until they just begin to burst.

Either way, you MUST make sure you keep the juices. So much yummy flavour!

Creamy Avocado Pasta Sauce

Okay, let’s talk sauce. Here’s what you need:

  • Ripe Avocado
  • Fresh Basil
  • Extra Virgin Olive Oil
  • Lemon Juice
  • Garlic
  • Salt & Pepper

That’s it! No cream needed, ironically.

How to make Creamy Avocado Pasta

  1. Roast cherry tomatoes in a drizzle of olive oil and a hearty pinch of salt and pepper.
  2. Blitz together your sauce ingredients, pouring in starchy pasta water as needed to thin out.
  3. Toss through linguine, or long cut pasta of choice. Pour in roasted cherry tomatoes (with the juices).

Grilled Chicken

I was quite conscious with this recipe that the chicken added something to the dish, yet wasn’t too overpowering. I couldn’t quite bring myself to simply season with just salt and pepper, so here is a simple, yet flavoursome marinade.

Grilled Chicken Marinade

  • Oregano
  • Thyme
  • Garlic
  • Lemon Juice
  • Olive Oil
  • Salt & Black Pepper

Just 1/4 tsp of each seasoning does the world of good.

Tips for juicy Grilled Chicken

  1. Firstly, as you guessed, use a marinade. Not only will this inject flavour into the chicken, but the lemon juice will actually tenderise the meat. 
  2. Make sure you bring your chicken to room temp before you grill it. Cooking cold meat always results in a chewier texture than if cooked at room temp.
  3. Allow the chicken to rest after it’s cooked. This is potentially the most important. Resting the meat means it will soak back up the juices which would have once escaped.

How to grill Chicken Breast

  1. Butterfly the breast to make two thin, even breasts.
  2. Pop in a zip lock bag with your marinade and marinate for up to 8 hours.
  3. Let the chicken come to room temp, then grill over high heat for a few minutes each side until charred and just white through the centre. Allow to rest, then slice when ready to serve.

When it comes to what to serve with chicken avocado pasta, in this case I’ve opted for parmesan, fresh basil leaves, a side salad and garlic bread.

And if you’ve got a heart shaped bowl then it definitely helps 😂

Having said that, although this does make a romantic dinner, it also makes a quick and easy lunch! 

One final thing to note is that this is perfect for vegans too. As the avocado pasta sauce is dairy free, all you’d need to do is leave out the chicken and you’re good to go!

Chicken Avocado Pasta (Date Night Edition)

Ingredients (check list):

  • 7oz / 200g Linguine, cooked to packet instruction (saving 1 cup starchy pasta water)

Creamy Avocado Sauce

  • 1/4 cup/ 60ml Extra Virgin Olive Oil
  • 1 large Avocado, ripe but not bruised
  • 1 handful Fresh Basil
  • 1 clove of Garlic
  • 1/2 Lemon, juice only (or to taste)
  • Starchy Pasta Water, as needed
  • Salt & Black Pepper, to taste

Grilled Chicken

  • 1 large Chicken Breast, butterflied
  • 1/4 tsp each: Dried Oregano, Dried Thyme, Garlic, Salt
  • drizzle of Olive Oil
  • squeeze of Lemon Juice
  • Black Pepper, to taste

Roasted Cherry Tomatoes

  • 1 cup / 200g Cherry Tomatoes
  • drizzle of Olive Oil
  • Salt & Black Pepper, to taste

To Serve

  • Parmesan
  • Fresh Basil
  • Side Salad (see notes)
  • Garlic Bread


  • In an oven tray, combine your cherry tomato ingredients and roast in the oven for 10-12mins at 200c/390f. For a more intense flavour roast at a low temp over a longer period of time (as low as 150c/300f for as long as 1hour+).
  • Meanwhile, in a zip lock bag combine your grilled chicken ingredients and allow to marinade for as long as you have time for (up to 8 hours). Grill on high heat for a few mins each side, until just white through the centre, then allow to rest to one side. Just before serving, slice into strips, ensuring you slice against the grain and at an angle.
  • In a food processor, combine your avocado sauce ingredients, using pasta water to thin out as needed and adjusting seasoning to preference. Toss through your pasta, then add in your tomatoes (with all the yummy juices from the pan). 
  • Serve with sliced grilled chicken on top, a heavy sprinkling of parmesan, a side salad and some garlic bread.
