Ahh pesto my dear friend, it’s been a hot minute since we last met with The Ultimate 10 Minute Pesto Pasta. Since then I kinda feel like I’m cheating on you… Or at least adding a few new members to our relationship. Okay crap this is getting weird *clears throat* what I’m trying to say is instead of traditional pesto, this time I’ve added in another couple of goodies! Much better..
I absolutely adore rocket (otherwise known as arugula). It’s got a beautiful peppery bite to it and adds a really nice twang to this dish.
The avocado offers a real hearty component to the pesto. When blended with the oil, you get a nice silky yet creamy finish which is just soooo yummy. This works perfectly with the linguine as it just oozes in and out of the noodle.
Mixed in with a little crunch from the pine nuts? You seriously can’t beat it. Okay, let’s move on.
The beauty of making a pesto is that it’s so easy to adapt and make to preference. Just simply taste test after the final combination and add in any extra measurements accordingly. These quantities worked for me and I’m confident they will for you too. But at the same time I really do encourage you to follow your pesto pallet’s and use this as a basis to suit your taste buds.

- 10.5 oz (300g) Linguine or pasta of choice
- 1 Ripe Avocado
- 1 packed cup Fresh Basil
- 2/3 packed cup Fresh Rocket
- 2 Heaped tbsp of Parmesan plus extra to serve
- 2 tbsp Toasted Pine Nuts
- 1 Clove of Garlic
- Juice from 1/2 Lemon
- 4-5 tbsp of Extra Virgin Olive Oil or as needed
- Salt & Pepper to taste
If they aren't toasted already, lightly fry the Pine Nuts in a saucepan - no oil needed- until golden.
Pop your Linguine in salted water and cook accordingly
Meanwhile, add your Basil, Rocket, Avocado, Pine Nuts, Parmesan, Garlic, Lemon Juice and Seasoning in a food processor and blitz until combined, slowly adding in your Olive Oil to thin out. You don't need to work the pesto too much else it can become a little frothy; you want to keep a slight crunch from the Pine Nuts.
Combine with your Linguine and toss gently over low-medium heat until hot throughout. Serve with garnish and an extra sprinkle of Parmesan. Enjoy!
